Ingredients:
For chicken fritters/pakoras:
*300g boneless chicken, cut into bite sized 1 1/2 inch pieces
*1 tbsp soya sauce
*2 tbsp tomato chilli sauce
*2 heaped tbsp ginger garlic paste
*salt, to taste
*black pepper, to taste
*1 medium sized egg, beaten
*65 g cornflour
*oil, to deep fry
For chilli chicken gravy:
*2tbsp oil
*1 onion, chopped
*4 spring onion whites+ greens, seperated and chopped
*2 tbsp ginger garlic paste
*3 capsicums
*2 tbsp soya sauce
*1/4 cup red chili sauce
*1/4 green chilli sauce
*1/4 cup tomato sauce
*2 cups chicken stock
*2 tbsp cornflour+ 1/3 cup water
*salt
Method
- First you add your soya sauce to your chicken and add in your tomato chilli sauce. Then add the ginger garlic paste, some salt to taste and black pepper to taste. Then mix this by hand.
- Then once everything is mixed properly cover it and refrigerate for 5-6 hours or overnight.
- Then add in your egg and mix it lightly. Then add in your cornflour and mix till everything is well combined.
- Then you heat your oil. Once it is hot enough add in your chicken. Cook each chicken for about 3 minutes. It is golden brown after 3 minutes and set it aside in another bowl.
- Heat your oil in a vessel and add in your onion, spring onion whites. Mix that.
- Then add in your ginger garlic paste. Give a stir.
- Now let that cook for 1 minute. Add in your capsicum and mix that in as well.
- Then add in your salt. Give that a proper mix.
- Cover and let it cook for 3-4 minutes. Meanwhile add in your water to cornflour and mix that properly as there are no lumps. Then set it aside.
- After 4 minutes uncover and give it a stir. Then cover and let it cook for 3 more minutes. After 3 minutes give a proper mix.
- Switch off the flame and add all the sauces. Add in your tomato sauce, your red chili sauce, green chilli sauce and your soya sauce. Give that a good mix.
- Then switch on the flame on low and add in your chicken broth. Mix that well.
- Then switch the flame to medium and let it boil. Once it comes to boil add in your corn flour paste and give it a mix.
- Also add in your spring onion greens and mix them in.
- Now add in your chicken pieces and give it a final mix. Then switch off the flame and serve it hot. It is ready to eat.
