Ingredients: Chicken 1 kg.
Charcol
Oil 1/2tsp.
To make marinate.
Onion 1number chopped.
Ginger.
Garlic 4 cloves.
Red chilli 20 numbers.
Sugar 1 1/2tsp.
Salt 2 tsp.
Oregano 2 tsp.
Smoked paprika 2 tsp.
Bay leaf 2 numbers.
Extra virgin olive oil 1/2cup.
Coriander leaves.
Method:In a mixer jar.Add the ingredients required for marination and grind them to a fine paste.
Take the chicken in a bowl,Add the ground marinade and mix well.
Heat some charcoal on fine and place them in a small bowl.Keep the small bowl inside the bowl with the chicken.
Add some oil to the charcoal,Close it with a lid let it smoke and marinate for about 1hour.
Heat a grill pan and grill the marinated chicken pieces.
Grill the chicken piecestill they turn golden brown in color and have a nice char to it.
Serve the peri peri chicken with lemon wedges and dip of your choice.
