Thirunelveli irutu Kadai halwa is famous for its taste. The shop opens by 5pm and closes at 8pm, hence it was called as irutu kadai(dark shop). Now let us see how to prepare it.
1) Soak 100g of wheat in water for 24 hours.
2) Grind it after 24 hours and squeeze it to get the milk from soaked wheat.
3) Add 3 glasses of water to 1 glass of wheat milk extracted.
4) Add 500gms of sugar to the solution. (Sugar can be added more as per your taste)
5) 100ml of pure ghee to be added to enhance the taste and smell.
6)place it in stove and keep stirring.
7) keep adding 50ml of ghee every 10mins and continue to stir.
8) the process continues for upto 1.30hrs. Till then add ghee every 10mins.
9) the ghee starts separating from the halwa once it is ready.
10) add cashews to enhance the taste and serve it!!
