A spicy, traditional chole masala is served with puffy Indian bread called a bhatura. Chole bhature also known as Chana Bhatura is one of the most popular Punjabi dish like almost all over India. Chole stands for a spiced tangy chickpea curry and Bhatura is a soft and fluffy fried leavened bread. Chole Bhature is one of the mouth-watering, spicy, exotic dish from Punjabi Cuisine.
Ingredients:
- Chickpeas/Chole
- turmeric powder
- ghee
- cinnamon stick
- cloves
- bay leaf
- dry red chili's
- onion
- tomatoes
- green chili's
- chole masala
- chat masala
- ginger-garlic paste
- cumin seeds
- asafoetida powder
- coriander leaves
Method:
1. Soak chole for at least 7-8 hours. Now drain excess water and add this chole in the cooker. Add 1tsp salt, turmeric powder, 2 and half cup of water. Cook on medium flame for 4-5 whistle.
3. Then add 2 chopped tomatoes, 1 tsp turmeric powder, 2 tsp red chili powder, 3-4 small size of chopped green chili's, 1 tbsp Ginger garlic paste, 3tsp chole masala, 1 tsp chat masala and salt to your taste according and cook it well.
5. Now take another pan add 2 tbsp ghee, 2 tsp cumin seeds, 1/4 tsp asafoetida powder, 1/2 tsp red chili powder. Then add this masala on a chole and cover chole for about 5 minutes. Add some chopped coriander leaves and served this chole with bhature.
Ingredients:
- All-purpose flour - 1 and 1/2 cup
- Semolina- 1/4 cup
- Curd - 1 cup
- Sugar - 2 tsp
- salt to taste
- Cooking soda a pinch
- Ghee - 2 tsp
- A little Water
- Oil for frying
Method:
1. Mix all the ingredients & knead it well. Add All purpose flour, Semolina, Salt, Sugar, Cooking soda & mix it well. Now gradually add Curd & mix it well. Then add little water & knead it into a dough.
3. Roll the dough into a small balls. Then flat it out with a rolling pin. Cut it out evenly with the help of a cutter or a simple round container, to get the round shape. Deep-fry in hot oil. Your Bhature is ready.
