Garlic and Buttery Mushroom Noodles Recipe

 

Garlicky & buttery Mushroom Noodles made with shiitake mushrooms that are so meaty, satisfying, and comforting.⁠ Mushroom noodle stir fry with cashews. This dinner took me less than 15 minutes to cook. So let's see the delicious recipe of garlic and buttery mushtoom noodles.

  • 300 g mixed mushrooms 
  • 500g cooked noodles (I used Amoy straight to wok udon noodles) 
  • 2 cloves garlic
  • grated juice of 1 lime 
  • 2 tbsp toasted sesame oil 
  • 2 tbsp Tamari or soy sauce 
  • 1 tsp chili flakes 
  • 1 veg stock dissolved in 1/4 cup hot water 
  • 1/2 cup toasted cashews

Method:

1. Heat 1 tbsp of sesame oil in a pan and fry the mushrooms for 5 minutes. Take them out and set it aside. 

credit:party image reference2. Put the 2 tbsp of oil in the same pan and cook the garlic for a couple of minutes until its raw smell goes off. Add the lime juice, tamari (or soy sauce), veg stock, and cook for a couple of minutes.

3. Put the noodles in the pan and stir through the sauce. Add the mushrooms, chili flakes & cashews and stir through it well. I served it with bok choy but would also be yummy with broccoli, sugar snap peas, any green veg you like!
