How to make at home Chicken cutlet

 

Here, I've taken 250 gm of boneless Chicken. You may use Chicken with bones too. If so, you just have to separate the meat from bones after cooking. We shall cook the chicken now. For that, add ½ teaspoon of crushed Pepper. Add ½ teaspoon of Salt. Add ½ cup of Water.

In a medium flame, cover with the lid and cook till done. When the chicken is done, reduce the remaining water on a high flame. When the Chicken is being done, boil the other major ingredient, Potato. Here, I've taken 2 medium-sized Potatoes. That would be around 250 gm. 250 gm of Potato for 250 gm of Chicken. That's the ratio.

Now, add some water and pressure cook it. It would cook fast if sliced through the middle. When the Potato is done, mash well. The Chicken is ready now. Now, crush it using a mixer or chopper. Here, I've crushed the Chicken well. And have mashed the Potatoes well. Now, let's prepare the Cutlet Mix. Heat a pan and add 1 tablespoon of Oil. 
credit: third party image referenceWhen the oil is hot, turn the flame to medium and add 10 cloves of Garlic (1-inch). Add a 1-inch piece of Ginger (finely chopped). Add 2 Green Chillies (finely chopped). Sauté it for 10-15 seconds. Add 1 medium-sized onion (finely chopped). Mix them well. Add ½ teaspoon of Salt. Add 2 sprigs of Curry Leaves (chopped). Sauté till golden brown. Now, add 1 teaspoon of crushed Pepper. Add 1 teaspoon of Garam Masala. Mix it for 30 seconds. Now, add the crushed Chicken and mix it for 2 minutes. Add the mashed potatoes and combine them well. 

Turn off the flame. When the heat settles, blend the mixture with hands. It's well-blended now. Now, we need to prepare 2 more ingredients. Take 1 beaten Egg. Take ½ cup of Bread Crumbs. You may use store-bought Bread Crumbs or make it at home, by eating bread on a pan and crushing it in a Mixer. Now, let's see how to shape the cutlets. First, take the mix, press gently and make a ball. Keep the ball on the palm,  and with the other palm, press gently and shape it. 
credit: third party image referenceWith 250 gm Chicken, you can make 6 normal-sized Cutlets. Now, take Oil for deep frying. You need not take too much oil; a level enough to submerge a Cutlet would be enough. When the oil becomes hot, take the shaped Cutlets one by one, dip it in the Egg; and coat Bread Crumbs like this. Fry this in the Oil. 

Chances of breaking the Cutlets are high if the Oil is too hot or too low. So make sure to turn down the flame to medium when the Oil is heated. Flip the Cutlet when the side turns brown. Unlike other snacks, Cutlet doesn't need much time to cook. Since the Cutlet mix is already cooked,  we just have to sear the coating. Chicken Cutlets can be served hot along with some Tomato Ketchup.
