Ingredients:
Light coriander slices - 1 kg
Stir--cup
Chili- 1 tbsp
Salt
Coriander powder- 1 tsp
Garam masala- ½ tsp
Anise powder- ½ tsp

Policy:
Put senagapindi in a pan and fry on low-flame till it becomes fragrant, it will take some time to speed up. When it turns red and fragrant, set it aside.
Now heat oil and let it simmer, then add inch sliced coriander pieces and toss well with salt and turmeric.
Aubergine is often mixed with a spatula to make it sticky.
Toss the coriander slices well up and down in the middle. Cover and fry until the pieces turn brown.
Now add chilli, coriander powder, garam masala and anise powder in senagapindi and mix well with the chopped coriander pieces.
Take this powder well and let it simmer on medium-flame for 4-5 minutes.
Redden quickly.
Tips:
Make sure the aubergines are light, and do not overcook until the aubergine pieces are slightly oiled.
