Chole and Bhature doesn't it sound tasty and yummy. But as the name sound complicated the making of this receipe is not so complicated. One can make this receipe immediately after thinking. I many times think receipe and make this receipe after one hour of thinking.
Chole and Bhatore is mainly a breakfast dish. It is mainly a dish of soaked chickpeas known as kabuli chana.Chole is a spiced tangy chickpeas curry and Bhature is a soft and fluffy fried puri normally made of maida flour.
I normally make this receipe 5 to 6 times in a month sometimes for morning breakfast and sometimes for the night meal also. Chole and bhature can be enjoyed best at highway dhabas. But when you eat in restaurants or dhabas hygiene is the main issue. So better it should be made at our home.
Ingredients for chole
1 cup kabuli chana soaked overnight, but I make this even after soaking for 1 hour, some refined oil, 2 to 3 onions, 2 tomatos, 1 tspn jeera, some ginger and garlic paste, 2 tspn Chole masala,1 tspn chilli powder, 1/2 tspn turmeric powder, chopped coriander and salt to taste.
For Bhature
1 cup maida, 3 tspn curd, 1 tspn oil, salt to taste and oil to fry. Oil depends on the use of maker.
Method of preparation of Chole
Now heat pressure cooker and wash the chana well then put the chana in a vessel put some salt and enough water. Pressure cook the chana for atleast 3 to 4 whistles.
Now heat some oil in a kadai. Add jeera saute it well for 1 minute on small flame. Now time to add the onions and tomatoes in the kadai, fry the onion and tomatoes very well for 2 to 3 minutes. Now add the ginger and garlic paste in the fried onions and tomatoes. Again fry it for 2 to 3 minutes.
Now it's time to add the cooked kabuli chana which we had already pressure cooked in the pressure cooker. Now add 2 to 3 cups of water stir the chana very well, let is cook for 5 minutes on low flame. Now it's time to add Chole masala, turmeric powder, chilli powder powder. Now cover the kadai and again cook it for 10 minutes.
Now garnish it with some chopped Corriander leaves. Our chole is ready now.
Preparation of Bhature.
Now make a soft dough of maida, curd, jeera, salt. After the dough is ready cover it with wet cloth for 20 to 30 minutes.
Now divide the dough in equal proportion. Now roll the dough and make equal size bhaturas.
Heat oil in a deep non stick pan and deep fry the Bhaturas one at a time, till they turn golden brown.
Serve the Chole and Bhatures hot with sliced onions and lemon.
