Potato Bell Pepper or Aloo Shimla Mirch is a mild gravy of potatoes mixed with bell peppers and Indian spices. If you’re bored with your regular meal, then do try this Aloo Shimla Mirch recipe for a yummy change.
- Olive Oil-1.5 tbsp
- Cumin Seeds- 1 tbsp
- 3 medium-sized Potatoes
- Red, Yellow & Green Capcsicums- 1/2 of each
- 2 onions - 1 Chopped & 1 Onions petals
- Garlic- 3-4 cloves
- Tomato’s- 2
- Red chili powder-1/4th tsp
- Turmeric Powder
- Salt to taste- I added 1 tsp
- garam masala- 1/2 tsp
- Chopped Coriander Leaves to Garnish
Method:
1) Chop Potato and Capsicums into cubes or chunks. Brush Olive Oil on Potatoes and capsicums. Air fry Potato at 180°C for 7 mins, and Capsicums at 140° For 5-6 mins. Alternatively, you can saute potato and capsicums separately in a pan.
3) Next, add tomatoes and turmeric powder. Cook until the tomatoes turn mushy. Add Garam Masala and mix well. Now add air-fried Potatoes and capsicums. Cover the pan with a lid and cook for 5 minutes on low to medium heat. Air Fry onion petals at 160°C for 3-4 minutes and add to the pan. Cover the pan again for 2 mins and cook the sabzi.
