Rajasthani Style Delicious Red Chili Garlic Chutney Recipe

 

Garlic chutney is one of my favorite chutneys and I have it almost like a dip and a condiment for so many dishes. This time I have decided to follow the authentic recipe to prepare Rajasthani garlic chutney. So today I will be sharing this delicious recipe of garlic chutney.

  • Peanuts- 3/4 cup
  • 3-4 red chilies (Kashmiri chilies will give a redder color)
  • Garlic- I use whole 8-9 pods
  • Salt- 1/2 tsp and to taste
  • Jaggery- 2 tsp
  • Tamarind- 1 tsp( from concentrate) or a small ball
  • Oil- 1 tsp

Method to make garlic chutney:

1. Roast peanuts and keep aside. Heat oil and saute the garlic and the red chili till the garlic is fragrant. Keep it aside.

credit:party image reference2. Grind the peanuts, chilies, and garlic with the salt, jaggery, and tamarind. Adjust the sweetness and salt and add as needed.

3. The grinding has to be with no water but that is not always possible as it depends on the kind of grinder we are using. If you need a little sprinkling of water just enough to grind it’s okay. Or you can add a bit of oil to grind.
