It is not the case in Chhattisgarh that someone prepares a dish on Teej festival. People here are fond of food and even on normal days there are some famous foods, which are made. Chhattisgarh is called the rice bowl, which means that paddy is cultivated here the most. Only then rice and the dishes made from it are the staple food. The special thing is that here gram flour makes more dishes than rice and rice flour. Like typical, is made from gram flour and is very tasty in food. Sohari is very easy to make and you can eat it with vegetables. Tasmai is considered a special sweet of Chhattisgarh, which is made by adding khoya. 1.Khurmi

Material

100 gram gram flour

½ tsp crushed red chili

1 tsp spleen

½ tsp celery

Salt to taste

Oil as required

Method

First, take gram flour in one bowl. Now add crushed red chillies, spleen, celery, salt to the gram flour. Add 3 teaspoons of oil to it and mix well with hands.

Add a little water and make a tight dough. Keep this dough for 10-15 minutes.

Now make small balls out of it and make a shape of the rope by making it a little longer and sticking both corners. In this way Khurma are made in many shapes. Make your mind the shape you want.

Now put oil in the pan on the gas and turn it on medium flame. Once the oil is hot, add one by one fry until it becomes light brown. You can also eat it as a snack and make it and store it for 20-25 days.

2.Khurmi

Material

1 cup semolina

3 cups wheat flour

1 tbsp ghee

200 gm jaggery

½ cup spleen

½ cup dry coconut

½ cup CK peanuts

Method

First take wheat flour in one bowl. Add semolina to it and mix. Finely chop the jaggery in some water. Put it in water.

Now add some ghee, spleen, dry coconut, peanut and jaggery water to the flour and sieve a little bit.

If tight, add a little water and prepare the dough with your hands. Now make a dough from the dough and make a long-sized dough by pressing it with your hands and prepare a leaf-like design on the dough.

Put the oil in a pan on the gas and turn the gas on medium flame. When the oil is hot, slow down the gas and put the prepared khurmi one by one and fry them till they turn light brown. Serve it hot.

3.Sohari

material

500 grams rice flour

200 grams wheat flour

Salt to taste

Water as required

Method

First take rice flour and wheat flour in a bowl and mix it well by adding salt to it. Make a soft dough by adding a little water and keep it covered for 10-15 minutes.

Put oil in a pan on the gas and heat it on high flame. Make small balls by applying oil in your hands and prepare them by making pudis.

Fry until it becomes light brown in hot oil. Sohari of Chhattisgarh is ready. It is very crispy and you can eat it with vegetables.
