Veg Special Aloo Dum Biryani Delicious Recipe

 

Aloo dum biryani is a layered and dum cooked Biryani with tender and soft baby potatoes and fluffy rice. A lip-smacking Veg Biryani with a rich flavor of masala. Serve with Onion Raitha and enjoy this delectable biryani. I know many of us do not believe in Veg/Aloo Biryani but trust me, this turned out to be as good as chicken.

  • Basmati Biryani Rice - 1 Cup
  • Bay Leaves - 2
  • Black Cardamom - 1
  • Black Pepper - 6 to 7
  • Cinnamon powder
  • Cloves - 4
  • Corriander (finely chopped) - 4 Tbsp
  • Corriander Powder - 1/2 Tsp
  • Garam Masala - 1/4 Tsp
  • Ghee - 5 Tbsp
  • curd
  • Ginger - 1/2 inch
  • Green Cardamom - 2
  • Green Chillies (finely chopped) - 2
  • Jeera - 1/2 Tsp
  • Potatoes (peeled) - 12 (300gms)
  • Kashmiri Red Chilli Powder - 1/2 Tsp
  • jeera powder
  • Salt - to taste

Instructions:

1. Take 300 gms potatoes( cut them into two) & boil them in the cooker on high flame for two whistles & then marinate them with 3-4 tbsps of curd, Kashmiri red chili powder, Garam masala, ginger garlic paste, half lemon juice, salt, dhania powder, roughly grind cloves, bhuna jeera powder & little black salt (keep it aside for 20-25 mins)(adjust the spices according to your taste)

credit:party image reference2. Soak basmati rice one cup in water for 15 mins & boil it in salted water till it’s 80% cooked! Strain the water & let it cool. Fry 2-3 chopped onions in oil for garnishing. Take a medium-sized pan, add a tablespoon of oil (preferably mustard oil) & a tablespoon of ghee & let it heat. Then, add black cardamom, cinnamon powder, curry leaves, half sliced onion, green chilies, and sauté them. Add the marinated mixture & bring it to boil. 

3. Remove half of the mixture & add half of the boiled rice over the remaining mixture in the pan. Add the fried chopped onions, coriander & mint leaves & repeat the same process for one more time. Cover the pan with a lid & add kneaded wheat dough to seal the pan so that it can give dum to the biryani! Cook it on low flame for 15 mins & shut the gas!
