There are two types of version : Vegetarian version and Non-vegetarian version. In a non-vegetarian version fermented dried fish is added. Singju can also be modified as per one's taste.
The dish can be found in some restaurants and hotels but it is limited to only some of the northeastern states of India.The dish is extremely popular in northeastern states of India. Here, it is mostly used as snack. It can be found in almost every stall in Manipur.
Ingredients :
1. Chopped cabbage or shredded cabbage.
2. Lotus stem thinly sliced.
3. Chopped raw papaya or shredded papaya.
4. Chopped onions.
5. Chopped coriander leaves.
6. Red chillies or green chillies or fried chilli powder.
7. Black salt (kala namak)
8. Mashed legume : it should be in powder.
Preparation :
1. In a bowl, add the chopped or shredded cabbage
2. Add chopped or shredded papaya. Mix it thoroughly.
3. Add the sliced lotus stem
4. Add chopped onion. Mix it well.
5. Add green chillies or dried chillies or fried chilli powder.
6. Add black salt and mix it well with the mixture.
7. Add Sodium Chloride ( common salt) and mix it thoroughly.
8. Add mashed legume.
Enjoy it.
If you are a non-vegetarian, you can add a fermented dried fish (ngari). You'll have to grind the fermented dried fish and mix it with the mixture.
If you want to use it for snack just lower the quantity of chillies. Snack noodles such as 'mimi' and 'rum pum' can also be added.
