Today lets see how to make coconut Burfi This recipe is very simple and easy to make at home.
Ingredients
1. Coconut - 2 Cup
2. Sugar - 1.5 Cup
3. Milk - 3 tbsp
4. Ghee - Required
5. Cashews - Few
6. Cardamom Powder - 1 tbsp
Method
1. To make this burfi I have taken 2 cups of Coconut I always hate grating coconut, so what I do is cut the coconut into small pieces and grind it in mixie. Then I will pack 1/2 cup in zip lock bag and freeze them so whenever required thaw them in the fridge and use.
2. Now to make coconut burfi lets roast the coconut first Saute it on a medium heat without changing its colour.
3. Now after 2 minutes lets add sugar For 2 cups of coconut we will need 1.5 cups of sugar.
4. Also, add 3 tbsp of milk to dissolve the sugar easily. Mix it well
5. Once the sugar melts, turn down the heat and let it cook.
6. In the meanwhile lets roast some cashews. Melt 1 tbsp of Ghee Once the ghee is melted add cashews, Roast until they are nice and golden.
7. Now it has been 5 minutes, sugar has started boiling, let it cook for some more time.
8. Now the coconut mixture has started to thicken and mix it often to prevent burning at the bottom.
9. Once they are nice and thick add cardamom powder also add 1 tbsp of ghee and the roasted nuts. Mix it once
10. Now grease the plate with some ghee and transfer the coconut mixture and shape it with a spoon.
11. Once slightly cooled cut into desired shapes.
12. Our coconut burfi is ready to be enjoyed.
