Litti chokha is a complete meal that originated from the Indian state of Bihar. It is also popular in Jharkhand and parts of Eastern Uttar Pradesh. It is a dough ball made up of whole wheat flour and stuffed with gram flour, pulses, and mixed with herbs and spices and then roasted over coal or wood then it is tossed with much ghee.
For Dough-
- wheat Flour - 2 cup
- Salt - 1 tsp
- Carom Seeds - 1 tsp
- Ghee - 2 tbsp
- Water
For Garlic Chutney-
- Soaked red Chili - 10
- Garlic peeled cloves - 10
- Roasted Tomato - 3
- Salt - 1 tsp
For Filling -
- Sattu -2 cup
- chopped coriander leaves - 2-3 tbsp
- green Chilli - 2 tbsp
- chopped onion - 1 cup
- Ginger - 1 tbsp
- Garlic - 2 tbsp
- Black Salt - 1 tsp
- Salt - 1 tsp
- mango powder- 1tsp
- oil- 2tsp
- Kalonji - 1 tsp
- Carom Seeds - 1 tsp
For Chokha-
- Potato - Boiled (2 big)
- roasted eggplant -1
- Onion -1 cup
- Garlic -1 tbsp
- Green Chili - 1 tbsp
- Chopped Coriander - 4 tbsp
- Ginger- 1/2 tsp
- Garlic - 1 tbsp
- Onion Seeds - Kalonji - 1 tsp
- Black Salt - 1 tsp
- Amchoor - 1 tsp
- Lemon Juice -1 tbsp
- Tomato - 2 Roasted
- Ghee - 1 cup for dipping
Method-
1) Knead a soft dough using all the ingredients listed above. Keep it aside for 15-20 min.
3) For chokha, mix all the ingredients listed above and it will be ready. Use roasted eggplant and tomato.
5) Now, the final step is to make Litti. Roll the dough and fill with this Sattu filling. Gather all the ends as we do for paratha and then roast it on tandoor/ gas.
