Ingredients
Maize flour - 1 cup
Water - 1 cup
salt to taste
pinch of baking soda
All purpose flour / Plain flour - 4 tbsp
White pepper powder / black pepper powder - 1/2 tsp
Mixed herb - 1/2 tsp
Cheddar cheese powder
plastic bag / zip lock bag
Masala powder
1 tbsp red chilli powder
1 tsp Garlic powder
1 tsp onion powder
2 tbsp cheese powder
1 tsp Chaat masala
1/2 tsp mixed herbs
1/2 tsp black pepper powder
Cheese sauce
Steps
1 Take a pan add one cup water after water is boiled properly add salt as per taste & pinch of baking soda do not add more baking soda only pinch otherwise it will affect your whole recipe.
2 Take a spoon make sure that salt & baking soda is melted in water properly. Now add maize flour 1 cup mix it properly with spoon until you find the dry flour maize flour will dry in few minutes now turn the gas off cover it with the lit and keep it for rest at 10 minutes.
3 This process will help in the proper binning of the flour. Take a bowl after 10 minute transfer the mixture from pan to bowl add 4 tbsp of All purpose flour / Maida 1/2 tsp of white pepper powder if you do not have white pepper powder you can also use black pepper powder instead. Add 1/2 tsp mixed herbs
4 Mix is properly with your hand make a soft dough the all purpose flour should not be visible in the dough the colour of dough would be light yellow. Cover it with the cloth and let it rest for 5 minutes.
5 Take a zip lock bag cut it into two part take oil in your hand spread it evenly on the zip lock bag. Before spreading oil make sure your zip lock bag is clean & dry if it is not clean you can wash it and let it dry and then use it.
6 take a small portion of dough through you hand make it smooth and make a small ball now spread it from both hand it would be circle shape now place it on the center of the zip lock bag where oil is spread.
7 It should covered by both the side take a rolling pin and make a roti. the thickness of Nachos roti should be if you hold it in one hand you can see the shadow of your other hand through the other side.
8 Cut into square shape so that every nachos will be be same in shape now the square into vertical line 1/ 2 - 2 inch apart depending on your size of square now make triangle cut in the vertical lines which would be horizontally.
9 Insert the fork and make some hole on the triangle nachos so that would be proper while frying cover it with the plastic and complete the rest of the dough with same process.
10 Take a pan add oil after oil is heated properly add nachos one by one fry it on the medium to low flame and keep stirring it with the spoon so the nacho would be fried evenly and its taste would be crispy after it is light brown transfer it to the plate which has whole this with help in removing the excess oil from the Nachos.
11 Take a small bowl add red chilli powder, onion powder, garlic powder, cheese powder, chaat masala, mixed herbs, black pepper powder mix it with the spoon
12 For coating of nachos Take a big bowl add nachos add cheese seasoning powder as per your taste shake it well after the cheese powder it well coated add red chilli powder if you like spicy other wise you can skip red chilli powder. Add masala made in the bowl shake it well after it is coated transfer it to the plate with cheese sauce.
Keep the rest of nachos in the bag or a air pack tiffin box
