Ingredients:
- milk full fat 2 cups
- 3 tsp corn flour
- Milk powder 3 tsp
- 9 tsp sugar
- 1 packet strawberry ice cream powder
- Cashew 5 to 6
- Almond 5 to 6
- Pistachio 5 to 6
- Strawberry essence 1/2 tsp if needed
- 1 cup ice col water
method:
Take a heavy bottom pan and put milk into it and boil it once you see that the milk is about to boil then reduce the flame and take out milk of about 5 tsp from it and then add sugar into it and stir it a bit after then in a katori take corn flour and milk powder in equal quantity that is 3 tsp is enough for 2 cup of milk then put that milk which we took seperately and make starch of it then add this starch into the milk pan and stir it a bit at this time add ice cream powder into it and mix it well and allow it to get thick keep stirring so that the ice cream batter do not get stick at the bottom now chop the dry fruits very well and fine then add it into the ice cream mix and stir it and let it cook.
One the ice cream mix is thick just of the flame and if you feel that the smell of strawberry is less then put about 1/2 tsp of strawberry essence into it now in a bowl add ice cold water and then keep the pan onto it and keep stirring a little so that the temperature reduces soon after then one the temperature is dropped take out the pan and using hand blender blend the mixture or you can also use the hand beater and beat it like we beat the dal it will also work the same as the beater you need to beet it for atleast 5 minutes this will make the mixture fluffy and creamy and then take a container and put the batter into it if you want you can garnish it with the dry fruits if you want however it's optional after then cover it with foil or cling wrap and close the lid and put it into the freezer for atleast 8 hours if the container is flat if not freeze it for 12 hours ice cream is ready to be served.
To make some some variations you can try this tips
if you really want real strawberry ice cream then take the strawberries of minimum 15 to 20 and take out 1/2 cup of milk from whole of the milk and put that milk into the chopped strawberries and blend it to smooth paste after then when you do the process of boiling the milk add the sugar and let it get cooked then add this strawberry paste into it but it would be better if you sieve the paste it would be better to maintain the creamy texture then make the starch by taking 5 tsp of corn flour and 5 tsp of milk powder and the add that to the ice cream mixture and add 1/2 tsp of strawberry essence keep stirring it and cook until the mixture becomes thick and repeat the same process as above.
