Method of making
First, take out all purpose flour in a vessel. Then add melted ghee and salt and knead it softly with the help of water. After this, cover it with a wet cloth and keep it for 20 minutes.
Now put 2 tablespoons of oil in a pan and heat it. When the oil is hot, add cumin and asafoetida and fry it. After the cumin seeds are roasted, add ginger paste, green chillies, red chillies and other spices and stir fry.
After the spices are roasted, add gram flour and fry it while stirring. Now add mango powder and salt in this mixture and fry the mixture well until the aroma of gram flour comes. After roasting your stuffing is ready. Take it off the gas and let it cool down.
Now take small dough with the dough. After making the dough, roll it into a poori shape. Put a small spoonful of stuffing in the center of the puri and then lift it from all the sides and close it and roll it again to make the shape of puri.
Similarly, after all the kachoris are ready, heat the oil in a kadhai and reduce the heat and add the kachoris to it. Fry them till they turn golden brown (about 10 minutes) and then take them out in a separate vessel. Now serve it hot to your kitty party or family with coriander or tamarind sauce.
