Smokey chicken biryani, Everybody try this recipe

For Marinating -

Dried red chilly - 3

Black pepper corns - 10 

Cloves - 4

Star anise - 1/2 piece

Cardamom - 2

Cinnamon stick - 1piece

Cumin seeds - 1tsp

Chicken - 6 to 8 pieces

Spice mix masala powder - 1tsp

Coriander powder - 1tsp

Red chilly powder - 1 teaspoon

Ginger garlic paste - 1tbsp

Curd - 1 tbsp

Lemon - 1tsp

For Biriyani Masala -

Onion - 3 big

Onion - 1 for frying 

Ginger garlic paste - 1tbsp

Green chilly - 4

Tomato - 3 small 

ground spice mix masala - 1tsp

Garam masala - 1/4 Teaspoon

Turmeric - 1/4 Teaspoon

Curd - 3 tbsp

Coriander leaves

Fried onion - 1 tbsp

Oil

For Rice -

Ghee -2 tbsp

Cloves -3

Cinnamon - 1piece

Cardamom - 2

Bay leaf - 1

Jeeragashala rice -2 cups

Water - 4 cups 

Coriander leaves 

Lemon juice - 1tsp

salt

Method

1.For marinating chicken - Roast red chillies,black pepper corns,cloves,cardamom,cinnamon,star anise,cumin seeds. Grind the spice mix and set aside.

2.To the chicken add salt,ginger garlic paste, ground spice mix masala powder,red chilly powder,coriander powder, curd and lemon. Mix well and marinate for 30 minutes.

3.Fry the chicken on medium flame until it is done.

4.Fry 1 sliced onion till it becomes brown and crisp. Keep aside.

5.For masala- Add onions in heated oil and saute till it becomes golden brown.

6.Add ginger garlic paste. Saute till the raw smell goes. Add green chillies,tomatoes saute till mashy.Add salt, prepared spice mix,garam masala,turmeric powder.

7.Add curd and mix well.

8.Add fried chicken,coriander leaves and some fried onion. 

9.Turn off the heat and give a coal smoke for 3 minutes then remove coal.

10.For rice - In a pot add ghee. Add cardamom,cinnamon, cloves, bay leaf to the heated ghee. 

11.Add washed and dried rice. Saute it for 1 min. Add boiling water. Then goes salt,coriander leaves,lemon juice. Cook the rice till done.

12.For layering - to the chicken masala layer add boiled rice layer ,fried onion,coriander leaves,ghee and food colour dissolved in water( optional). Give a coal smoke for 3 minutes. Cover and steam cook on low flame for 10 -15 minutes.
