Spinach rice healthy tasty and full of iron recipe

Ingredients:

  1. Spinach 1 bunch
  2. Carrot 2
  3. Cucumber 2
  4. French beans 1/2 cup chopped
  5. Capsicum 1 big sized
  6. 2 medium sized onion
  7. 1 medium sized tomato
  8. 3 to 5 green chillies slited
  9. 3 tsp oil
  10. 1/2 tsp caraway seeds (shahi jeera)
  11. 1 inch cinnamon stick
  12. 1 bay leaf
  13. 3 cloves
  14. 2 cardamom
  15. Rice 2 cup
  16. 1 and 1/2 tsp ginger garlic paste
  17. 1/2 tsp turmeric powder
  18. 1 tsp coriander powder
  19. 1/2 tsp cumin powder
  20. 1 tsp garam masala powder
  21. 1/2 tsp sugar
  22. Salt as per taste
  23. Water 3 and 1/2 cup
  24. 1 lemon juice
  25. 5 to 6 tsp fresh coriander leaves chopped

Method:

To make palak rice or spinach rice first clean the spinach leaves and wash them then blanch the palak leaves just to keep its color green now how to blanch so take water in a utensil and boil it to maximum level and in another bowl keep water with ice cubes or you can use direct cold water kept in refrigerator now put the palak leaves in he boiling water and leave it for 30 seconds let it boil into it then after 30 seconds immediately remove them and put it into chilled water into the bowl then after 30 seconds remove it into a plate this is just to make palak or spinach not to absorb water.

Now chop the tomato, onion, capsicum, beans, and grate the carrot and cucumber, also soak the rice after washing it twice in normal water. After then it's time to cook for that in a pressure cooker add oil and let it get heated then add to it bay leaf, cloves, cinnamon stick, cardamom and caraway seeds and let them splutter a bit then add slit green chillies and onion together and saute it until the onion becomes translucent after then add french beans and capsicum to it and keep sauting until you get nice Aroma of fried beans then add to it ginger garlic paste and turmeric powder saute for a minute then add grated carrot and cucumber also add tomato and saute for 3 to 4 minutes then add soaked rice into it also add cumin powder, coriander powder and garam masala powder and mix well then add 3 and 1/2 cup of water and mix well then add sugar, salt and mix it and close the lid partially and make the flame to high and let one boil to arise after then reduce the flame and add lemon juice mix it then chop the palak leaves and add into it and mix well also add some fresh coriander leaves at this stage and mix well all the things and close the lid and on the the lowest flame let the rice to be cooked for 20 minutes after then off the flame the spinach rice is ready to be served.
