Nothing fancy but simple warm bowl of Macaroni Soup which is an easy one-pot recipe. This is a comforting and filling soup recipe you gotta try. So let's see the delicious recipe for macaroni soup!
- Macaroni- 1/2 cup
- Veggies (corn, carrot, beans, capsicum)- 3/4 cup
- Onion (finely chopped)- 1 big
- Ginger & Garlic- finely chopped (1 tbsp each)
- Green Chilli- finely chopped(as per taste)
- Tomato- 4 small
- Tomato Ketchup- 2 tbs
- Seasonings (Italian or any dried herbs)
- Butter and Olive Oil
- Salt & Pepper
Method:
1. In a blender, add roughly chopped tomato and blend it into purée. Strain it to remove pulp. In a nonstick pan or kadhai, add olive oil add butter. Add finely chopped onions. Sauté it for a min or two. Then add chopped ginger, garlic & green chili. Cook it for a min. Add prepared tomato purée. Let it cook on low- medium heat. Add 2 cups of warm water (or required as per your serving).
3. Add finely chopped veggies and macaroni. Let it boil until your macaroni will be soft and boiled.
