Yummy and tasty steamed carrot pudding recipe

Ingredients:

  1. carrot 3 fresh medium sized
  2. 2 cups milk
  3. 1/2 cup sugar
  4. Agar 2 tsp or china grass (1/4 cup)
  5. Water 1/4th cup as per requirement
  6. 1/4th cup roasted peanuts
  7. Salt a pinch
  8. Cardamom powder 1/2 tsp
  9. Almonds 5 to 6
  10. Cashews 6 to 7
  11. Pistachio 5 to 6
  12. 1 tsp ghee

method:

Very first thing what you have to do is wash the carrot I prefer to use the hybrid carrots here for the color purpose if you want you can also use the normal carrot which has less color, okay now peal the carrot to remove the root strands then dice it into small pieces after then in a heavy bottom pan add these carrot and add milk into it and on the medium flame cook it also add a pinch of salt at this moment this will help the carrot to cook well you need atleast 5 minutes to cook on medium flame once the milk starts boiling reduce the flame and add roasted peanuts to it and cook it also remember that you need to stir in between while cooking else it will stick to the bottom of the pan you need approximately 10 to cook the carrot check it by inserting knife or fork to one of the piece if it get cut easily then it's done off the flame and allow it to become cool after then grind it to smooth paste.

Now in the same pan put the ground paste and keep the flame to medium low and add sugar into it keep stirring and cook for 3 to 4 minutes then add 2 tsp of agar agar powder in case if you don't have agar agar powder then use china grass by soaking it into warm water of about 1/4th cup, after then keep cooking and stirring for again 3 minutes now add cardamom powder and if you like dry fruits into it add at this time finally chopped dry fruits I use it for garnishing purpose it's up to you how you like once this is done add 1 tsp of ghee into it and cook for 1 more minutes and then off the flame and grease the mould in which you are going to put the pudding to get set then add this pudding and put those chopped dry fruits that is almonds, cashews and pistachios to garnish it then let it get cooled keep it aside for 3 to 4 hours you can also keep it in refrigerator for 2 hours after then slice it and serve the pudding.
