A very unique recipe for a fresh start of festival season - Tavsali (Cucumber Cake)

Festive season is on the edge or moreover even started and some of the big festival are also gone. Buying and consuming sweets in the festival season is our first priority in this season but every year a message is circulated all over the country of selling the worst quality in this season. So here we are with a very unique and exciting recipe that make your festival not only more sweeter but also memorable.

Ingredients

Cucumber - 1 Cup

Suji - 1 Cup

Grated Coconut - 1/2 cup

Jaggery - 1/2 cup

Ghee - 2 tsp

Caramelised nuts as per required

Method

First of all peel the cucumber and deseed it with the help of a spoon, for better texture and flavour take the white cucumber and finally grate it. Now take a pan and heat about 2 tsp of ghee in it and then pour 1 cup of Soji and roast it till it turn in to a light brown colour. Now add 1/2 cup of grated coconut in it and about 1 cup of grated Cucumber in it. Finally add about 1/2 tsp of Jaggery in it and heat it till the jaggery lose the water and give it a smooth sticky texture and a sweet smell.

Now take a steamer and heat by pouring some water in it. In a silicon cake tin pour the mixture prepared earlier and steam it in the steamer for 10-12 minutes. Check the cake with the help of a tooth pick and when the tooth pick remove clean take out the cake out of the steamer and demould it. Finally take a fancy platter and put the cake on it garnish it with the caramelised nuts and serve hot.
