Eggless Custards are a blessing for vegetarians, also making custard with egg as an ingredient can be challenging for some, especially for those who are not familiar with desserts at home! So what about making eggless custard at home that to with some fresh natural fruits and some dry fruits to go with it? Lets get into the recipe without further ado to rock our parties and celebrate get together this upcoming festive season to gain praises from everyone for this lovely dessert. But dessert lovers need not wait for any occasion to make it right?
Preparation Time :10-15 minutes
Cooking Time : 30 minutes
Refrigeration Time : 01 hour
Ingredients:
- 1 ltr milk (full cream milk OR pasteurized)
- 5 heaped tbps of eggless vanilla custard powder
- 1 cup of granulated sugar (or more if desired)
- 1/2 cup peeled and chopped apples
- 1/2 anaar (pomegranate)
- 1/2 cup peeled and chopped chikoo (sapodilla) OR 1/2 cup of chopped bananas
- 100 gms chopped badam (almonds) [optional]
- 100 gms chopped pista (pistachios) [optional]
- 100 gms chopped kaju (cashew nuts) [optional]
- pinch of salt
- some almond flakes for garnishing
Method:
- Separate two and a half cups of milk from 1 ltr milk.
- Add sugar and a pinch of salt (salt will enhance and balance sweetness) to the remaining milk and boil in a deep bottomed vessel. Keep stirring so that the sugar dissolves completely and milk does not stick to the bottom.
- Meanwhile, in a separate bowl mix custard powder and the milk which was separated before and combine well into a smooth liquid paste. Make sure that there are no lumps.
- After the milk is boiled, make the flame low and add the custard powder and milk concoction while stirring continuously to make sure that it does not get lumpy.
- Thicken the mixture on a low flame.
- Switch of the gas after you see that it has thickened a little bit and let it come down at room temperature.
- Keep it in the refrigerator for atleast 1 hour.
- By the time you can chop the nuts and fruits and be ready.
- Remove the custard from refrigeration and combine the fruits and nuts in the custard.
- Garnish with some almond flakes and mint and serve cold

Tips:
- Follow the instructions carefully given on the packet for exact measurements as each and every brand is different.
- Use any other flavored custard powder if desired, but trust me vanilla really goes well with natural fruits custard.
- Add honey in the custard instead of sugar to give natural sweetness, but do not add while boiling milk or when the custard is hot otherwise honey might lose its properties, add after chilling in refrigerator and while adding fruits and nuts.
- Do not add the custard powder directly in the milk, adding directly will make lumps in the custard.
- After pouring custard and milk concoction keep stirring on a low flame till you don't turn it off
- Do not over thicken the custard while cooking.
- Adding dry fruits is optional.
- Do add apple and anaar (pomegranate) in the custard, sourness of anaar will add natural taste and distinct flavor in the custards and also balance its sweetness.
- Add either chikoo (sapodilla) or banana in custard depending on your preference and taste buds, but you can anyway add both of them.
- Depending on season and availability you can add strawberries and mangoes also in this dessert.
