Yummy delicious fresh coconut milk curry

Ingredients:

  1. Fresh coconut 1
  2. 1 tsp of coconut oil (or any other refined oil)
  3. Warm water 2 cup
  4. Mustard seeds 1/2 tsp
  5. Dry red chili 1
  6. Curry leaves 10 to 12
  7. Onion 1 medium sized
  8. Tomato 1 medium sized
  9. Ginger garlic paste 1 tsp
  10. Turmeric powder 1/4th tsp
  11. Red chili powder 1 tsp
  12. Coriander powder 1 tsp
  13. Cumin powder 1/2 tsp
  14. Sambar masala powder 1 tsp
  15. Lemon 1
  16. Salt as per taste

method:

To make coconut curry first we have to make coconut milk for that we need warm water and grate the whole coconut and then put it into mixing jar now add some of the warm water to it and grind it 2 to 3 times then keep a muslin cloth on a bowl then put this grinded coconut to it now take all the corners of the cloth together and squeeze it completely now the same grinded coconut transfer to mixing jar and again add the warm water to it and grind it then repeat the same procedure to extract all the coconut milk once you extract the milk then keep the grinded coconut powder aside we have our coconut milk ready now we have to make curry of this.

Chop the onion and tomato very fine now take a utensil and add oil to it and let it get heated for 30 seconds then add mustard seeds to it once the seeds starts crackling then add curry leaves dry red chili to it and after then add chopped onion and saute for 2 minutes or until the onion turns translucent then add tomato to it and saute also add a pinch of salt then close the lid and on the low flame allow it to be cooked for 3 to 4 minutes or until the tomato becomes mushy after then add turmeric powder, ginger garlic paste and saute well then add red chili powder, coriander powder, cumin powder, amchur powder 1/4th tsp (optional) and sambar masala powder then saute well now here you have to be cautious while adding coconut milk if you add all the milk at once then there is a chance that the milk gets curdled so to avoid that we have to add first 1 small katori of milk and let one boil comes to it after then add whole of the remaining coconut milk and mix it then take one boil to it and make the flame to low then add lemon juice and salt to it and mix it and cook it for 2 minutes now the coconut curry is ready to be served, serve this delicious curry with plain rice hope you all liked this enjoy this recipe with your family and friends.
