Spinach fried rice! I call it that because fried rice is cooked in spinach sauce or whatever you think is right after you read how it's made. We make this when we are tired of the regular fried rice. You can always toss in any other thing of your choice or diced sausage chunks.
To grind:
- 2 cups blanched spinach
- 3 garlic cloves
- 5 green chilies
- 1 tsp vinegar
- Water to grind to a smooth paste
Other ingredients:
- 1 cup of rice
- 4 garlic cloves- finely chopped
- Green bell peppers - 1/2 (if adding other bell peppers, as I did) or else 1 full, chopped or cut into juliennes.
- Cabbage/Brussel sprouts- cut into juliennes
- Spring onions whites- 3
- Spring onions greens- to garnish
- Black Pepper powder- 1 tsp
- Soy sauce- 1tsp
- Vinegar- 1 tbsp(I like it tangy)
- Chilly paste- 2 tsp(optional)
- Salt- to taste
- Oil- 2 tbsp
Method:
1. Cook the rice with salt and keep aside. Grind all the ingredients mentioned above and keep aside. Heat a wok/pan on high heat and add in the oil. To this, add the spring onions whites, and garlic and saute for about a minute. Then toss in the ground spinach sauce and cook for about 2 minutes.
3. Add the Brussel sprouts/cabbage in and mix well. The heat in the pan and the rice will mildly cook it and that should be enough.
