Ingredients:
- peanuts 1 cup
- Ghee 1 tsp
- 100 gram jaggery
- 1 tsp water
- 2 sheets of parchment paper (optional)
method:
To make peanut Chikki first we have to roast the peanuts so put the peanuts in a pan and on the medium flame roast them until you get nice aroma out of it and until slightly black spots appear on the peanuts this is the right time to take out the peanuts it takes nearly 5 to 7 minutes to roast them after then put the peanuts on a cold surface or in a plate and allow it to reduce its temperature once you feel that you can touch then in that temperature means that the peanuts are just warm then at this stage remove the peal of all the peanuts and through the husk away take the roasted peanuts.
Now in a same pan put jaggery and ghee and on the low to medium flame cook the jaggery until it melts once the jaggery gets melt then put 1 tsp of water to it and cook the jaggery for 3 minutes then check whether the jaggery can be reached to the ball formation stage to check this take normal water in a katori then drop 1 drop of melted jaggery mixture into it if it settled down and when you touch and take it it forms a ball like shape then it is perfect this is the time when you have to put peanuts into it if there are aged people at home then crush the peanuts a bit then add okay now mix the peanuts to the jaggery mixture and cook for 1 minutes now put this mixture to 1 sheet of parchment paper and on top of it put another sheet and with the rolling pin just roll it to spread evenly then using sharp knife make cuts into it allow it to cool down then take it out and serve.
If you don't have parchment paper then you can simply grease the plate with ghee or oil a little then place this hot mixture onto it and spread it with the same spatula try to spread it as much evenly as you can then make cuts with the help of sharp knife allow it to cooled and then serve it hope you all like this recipe share it with your family and friends.
