Today we will make potatoes curry which is so simple but awesome in taste. It will take just few minutes to cook. So, let's get started to make it. To make it, we will need some ingredients that are below:
Ingredients:---
1) 4,5 boiled potatoes
2) Cumin seeds (jeera)
3) A pinch of hing
4) 3 medium sized tomatoes
5) 1/2 teaspoon red chillies powder
6) 1/2 teaspoon Turmeric powder
7) 1/2 teaspoon coriander (dhaniya) powder
8) 1/2 teaspoon garam masala
9) A pinch of Kasuri methi
10) 1/2 teaspoon of black salt
11) 1/2 teaspoon dried mango (Amchur) powder
12) Coriander leaves

Process:---
First, we will take a pan, kadhai or you can also cook this recipe in pressure cooker. Add some oil in the kadhai. Put jeera and hing in it. After sprinkle the jeera, add finely chopped tomatoes (tomatoes puree) in it. Now, add red chili powder, turmeric powder, coriander powder, in it. Just cook the masala for some times so that the will cook properly. After sometime, we will add salt in it. Also add little black salt. While adding salt we will keep care. Because we already added normal salt so carefully add black salt. Or it's depend upto you which salt you want to add more or less.
Now, stir all the mixture, and add boiled potatoes in it. Again mix all the things together, and cook for 2,3 minutes so that potatoes can absorb masala properly. Now, put some kasuri methi and Amchur powder and mix it. Also add some water in the curry. And cooked the curry untill it boils. Add some garam masala. And adjust the consistency of curry that you want.
If you want thick consistency , you can add little water or of you want runny consistency you can add little more water.
Potatoes curry is ready. Garnish it with coriander leaves.
Serve this curry with Puri, it's taste just awesome with Puri.
You can also eat this curry with roti, paratha or as a side dish.
